Place the quartered onions inside the cavity of the chicken. This adds flavor and helps keep the chicken moist during roasting.
Place the chicken breast-side up on the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). If the skin is browning too quickly, cover it loosely with aluminum foil.
Once cooked, remove the chicken from the oven and let it rest for at least 15 minutes. This allows the juices to redistribute, ensuring every bite is tender and juicy.
