Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt or to taste
  • ½ teaspoon baking soda

Wet Ingredients

  • 2 medium very ripe bananas peeled
  • ½ cup granulated sugar
  • cup vegetable or canola oil
  • 1 large egg
  • 2 rounded tablespoons sour cream lite is okay or Greek yogurt may be substituted
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon vanilla extract
  • cup walnuts roughly chopped, or ¾ cup mini semi-sweet chocolate chips (optional)

  • Step 1: Preheat your oven to 350°F (175°C). This ensures the bread bakes evenly and achieves that beautiful golden-brown color.
  • Step 2: Grease your loaf pan with a bit of oil or non-stick spray to prevent sticking. Set it aside for later.
  • Step 3: In your mixing bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda. This step helps to evenly distribute the leavening agents throughout the flour.
  • Step 4: In a separate bowl, use a fork or potato masher to thoroughly mash the ripe bananas until smooth. The riper the bananas, the sweeter and more flavorful your bread will be!
  • Step 5: In the bowl with the mashed bananas, add the granulated sugar, vegetable or canola oil, egg, sour cream or Greek yogurt, peanut butter, and vanilla extract. Mix until all ingredients are well combined.
  • Step 6: Gradually add the dry ingredient mixture into the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
  • Step 7: If you’re using walnuts or chocolate chips, fold them into the batter now for an extra layer of flavor and texture.
  • Step 8: Pour the batter into the prepared loaf pan and smooth the top. Bake in your preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 9: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm, or enjoy it at room temperature!
