Ingredients

For the Batter:

  • 4 medium Bananas ripe and mashed
  • ¾ cup Milk whole or any alternative milk
  • 1 cup All-purpose flour for the batter
  • 1 tablespoon Sugar to enhance the sweetness
  • 1 teaspoon Baking powder for fluffiness
  • ½ teaspoon Baking soda to help the fritters rise
  • ½ teaspoon Salt to balance the flavors
  • Vegetable oil for frying

Instructions

Cooking Instructions:

  • In a mixing bowl, mash the 4 medium bananas until smooth. You can leave a few small chunks for added texture if desired.
  • Add the ¾ cup milk to the mashed bananas and mix until well combined.
  • In a separate bowl, whisk together the 1 cup all-purpose flour, 1 tablespoon sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt.
  • Gradually add the dry ingredient mixture to the banana mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  • In a frying pan or deep skillet, heat about 1 inch of vegetable oil over medium heat. To test if the oil is ready, drop a small spoonful of batter into the oil; if it sizzles immediately, it’s time to fry!
  • Using a spoon or small ice cream scoop, drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Fry until each side is golden brown, about 2-3 minutes per side.
  • Once cooked, use a slotted spoon to remove the fritters from the oil and place them on paper towels to drain excess oil. Serve warm, and enjoy your delicious banana fritters!

Equipment

  • Mixing Bowl
  • Whisk
  • Frying pan or deep skillet
  • Slotted spoon

Notes

  • Store fritters in an airtight container at room temperature for up to 2 days.
  • For longer storage, freeze the fritters in a single layer on a baking sheet, then transfer to a freezer bag for up to 1 month.
  • To reheat, simply pop them in the oven at 350°F (175°C) for about 10 minutes to regain their crispiness.
