  • 1.25 pounds Stew Meat Cut into bite-sized cubes

  • 1 medium Onion Diced
  • 10 ounces Cremini Mushrooms Sliced
  • 4 cloves Garlic Minced
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Worcestershire Sauce
  • 8 cups Beef Broth
  • 3 cups Wide Egg Noodles Uncooked
  • ¾ cup Sour Cream
  • 3 tablespoons Cornstarch
  • Fresh Parsley For garnish

Instructions

  • Step 1: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Season the stew meat with salt and pepper. Add the meat to the pot in batches, searing until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  • Step 2: In the same pot, add the remaining 2 tablespoons of olive oil. Add the diced onion and sauté for about 3-4 minutes or until translucent. Add the sliced cremini mushrooms and cook for another 5 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Step 3: Stir in the tomato paste and Worcestershire sauce, cooking for another minute to enhance the flavors.
  • Step 4: Pour in the beef broth and bring to a boil. Reduce heat to low and simmer for about 20 minutes.
  • Step 5: Add the uncooked wide egg noodles and return the beef to the pot. Let simmer for an additional 10 minutes, or until the noodles are tender.
  • Step 6: In a separate bowl, combine the sour cream and cornstarch, whisking until smooth. Slowly stir in a few ladles of the hot soup to temper the sour cream, then stir the mixture back into the pot until creamy. Adjust seasoning with more salt and pepper if needed.
  • Step 7: Remove from heat, ladle into bowls, and garnish with fresh parsley. Serve hot.

Notes
