Ingredients

  • 15 oz black beans rinsed and drained
  • 4 oz mild green chiles
  • 2 cups enchilada sauce store-bought
  • 8 pieces corn or flour tortillas 6-inch size
  • 3 cups shredded Monterey Jack or Mexican blend cheese
  • 1/3 cup chopped cilantro
  • 4 pieces green onions sliced
  • 1 piece avocado sliced
  • 1/3 cup crumbled queso fresco

Instructions

  • Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  • Step 2: In a large mixing bowl, combine the black beans with the mild green chiles. Season as desired.
  • Step 3: Spoon the black bean mixture into the center of each tortilla, sprinkle with cheese, and roll them up tightly. Place seam-side down in the baking dish.
  • Step 4: Pour the enchilada sauce over the tortillas and sprinkle the remaining cheese on top.
  • Step 5: Cover with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Step 6: Garnish with cilantro, green onions, avocado, and queso fresco. Serve warm and enjoy!
