Ingredients

  • 1 cup old-fashioned rolled oats (or gluten-free oats)
  • 1/4 cup ground flaxseed meal
  • 2 tablespoons chia seeds
  • 1/4 teaspoon ground cinnamon
  • a pinch sea salt
  • 1/2 cup creamy almond butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract (optional)
  • 1/4 cup dried blueberries
  • 1/4 cup sweetened flaked coconut

Instructions

  • In a large mixing bowl, combine the rolled oats, ground flaxseed meal, chia seeds, ground cinnamon, and a pinch of sea salt. Stir until well blended.
  • In a separate bowl, mix together the creamy almond butter, honey, vanilla extract, and coconut extract if using. Stir until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients. Add the dried blueberries and sweetened flaked coconut. Use a spoon or spatula to mix everything together until fully combined.
  • Once the mixture is well combined, use your hands to scoop and roll the mixture into small bite-sized balls, about 1 inch in diameter. Place them on a baking sheet or plate lined with parchment paper.
  • Refrigerate the bites for at least 30 minutes to help them firm up. This step is crucial for achieving that perfect texture.
