Ingredients

For the Bread:

  • 1 cup all-purpose flour (plus 1 tablespoon for the berries)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar (plus 1 teaspoon for the berries)
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (fresh or frozen)

Instructions

Directions:

  • Preheat your oven to 350°F (175°C).
  • Toss the blueberries with 1 tablespoon of flour and 1 teaspoon of sugar.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a separate bowl, whisk together the granulated sugar, vegetable oil, eggs, milk, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Gently fold the floured blueberries into the batter.
  • Grease your loaf pan or line it with parchment paper and pour in the batter.
  • Bake for 50-60 minutes, or until a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
