Ingredients

For the Potatoes:

  • 2 lbs Yukon Gold potatoes
  • 1 tsp sea salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tsp paprika (or to taste)
  • 3 tbsp extra light olive oil (or any high heat cooking oil)
  • 1 tbsp parsley (finely chopped, optional for garnish)

Instructions

Cooking Instructions:

  • Step 1: Prepare the Potatoes
    Wash the Yukon Gold potatoes thoroughly to remove any dirt. Cut them into bite-sized cubes.
  • Step 2: Boil the Potatoes
    In a large pot, add the cubed potatoes and fill it with water until the potatoes are submerged. Add a pinch of salt and bring to a boil. Reduce heat and simmer for 10-15 minutes until fork-tender. Drain and let steam for a minute.
  • Step 3: Season the Potatoes
    Toss the drained potatoes with sea salt, black pepper, paprika, and olive oil in a large bowl.
  • Step 4: Sauté the Potatoes
    Heat a large frying pan over medium-high heat. Add the seasoned potatoes in a single layer and cook undisturbed for 5-7 minutes until golden-brown. Flip and sauté for another 5-7 minutes until crispy.
  • Step 5: Garnish and Serve
    Remove from heat and sprinkle with parsley if desired. Serve hot alongside your favorite breakfast.
