  • 4 tablespoons basil pesto DeLallo preferred
  • 5 ounces Brie cheese thinly sliced
  • 1/4 cup Sweet and Tangy Sun-Dried Peppers drained and chopped

  • Begin by gathering all your ingredients. Slice the Brie cheese thinly and chop the sun-dried peppers if they are not already prepared.
  • Spread about 1 tablespoon of butter on one side of each slice of ciabatta. This will help achieve a golden crust while cooking.
  • On the unbuttered side of two slices, spread 2 tablespoons of basil pesto, followed by an even layer of Brie slices and chopped sun-dried peppers. Top with the remaining slices of bread, ensuring the buttered sides are facing outward.
  • Place a skillet or griddle over medium heat. Allow it to warm up for a couple of minutes until it’s hot but not smoking.
  • Carefully place the assembled sandwich in the skillet. Cook for about 3-4 minutes on one side or until golden brown, then use a spatula to flip it. Cook for another 3-4 minutes on the other side until the bread is crispy and the cheese is melted.
  • Remove the sandwich from the skillet and let it cool for a minute before slicing in half. Serve warm and enjoy the melty goodness of your Brie, Pesto, and Sweet Pepper Grilled Cheese.
