Buckeye Balls (Peanut Butter Balls)

These Buckeye Balls are a chocolate-peanut butter dream come true! Easy to make and irresistibly delicious!

Ingredients

  • 1 cup creamy peanut butter (Jif works great)
  • 1 stick melted butter
  • 2 cups powdered sugar (more as needed)
  • 12 oz. chocolate chips

Instructions

  • In a large mixing bowl, combine the creamy peanut butter and melted butter. Mix well until fully combined and smooth.
  • Gradually add the powdered sugar to the peanut butter mixture, stirring continuously until dough-like consistency is achieved.
  • Using a cookie scoop or your hands, roll the mixture into balls, about 1 inch in diameter, and place on a baking sheet lined with parchment paper.
  • Refrigerate the baking sheet for about 30 minutes to firm up the balls.
  • While chilling, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  • Remove the balls from the refrigerator and dip each into the melted chocolate, allowing excess to drip off before placing back on the baking sheet.
  • Return the dipped balls to the refrigerator for about 15 minutes to let the chocolate set completely.
