Instructions
Step 1: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken and cook for about 6-7 minutes per side or until cooked through. Remove and let cool slightly.
Step 2: Shred the cooled chicken using two forks. Mix in buffalo sauce and ranch dressing until well coated.
Step 3: Preheat oven to 350°F (175°C). Slice Hawaiian rolls in half horizontally and place the bottom halves in a greased baking dish. Spoon the buffalo chicken mixture over the bottom halves and top with shredded cheddar cheese.
Step 4: Place the top halves of the rolls back on. Whisk together melted butter and Italian seasoning, then brush over the tops of the rolls.
Step 5: Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 10 minutes until golden brown and cheese is melted.
Step 6: While sliders bake, prepare coleslaw by mixing coleslaw mix, mayonnaise, lime juice, salt, and pepper in a bowl.
Step 7: Remove sliders from oven, let cool for a couple of minutes, then serve warm with coleslaw on the side or on top.
