Ingredients

Chicken

  • 1 pound skinless and boneless chicken breasts

Seasoning

  • Salt and pepper to taste
  • 2 tablespoons olive oil not extra virgin

Sauces

  • ½ cup ranch dressing
  • ½ cup Frank’s buffalo sauce

Rolls

  • 12 pieces Hawaiian sweet rolls

Cheese

  • 2 cups shredded sharp cheddar cheese

Toppings

  • 2 tablespoons melted butter
  • ½ teaspoon Italian seasoning

Coleslaw

  • 2 cups coleslaw mix
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Step 1: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken and cook for about 6-7 minutes per side or until cooked through. Remove and let cool slightly.
  • Step 2: Shred the cooled chicken using two forks. Mix in buffalo sauce and ranch dressing until well coated.
  • Step 3: Preheat oven to 350°F (175°C). Slice Hawaiian rolls in half horizontally and place the bottom halves in a greased baking dish. Spoon the buffalo chicken mixture over the bottom halves and top with shredded cheddar cheese.
  • Step 4: Place the top halves of the rolls back on. Whisk together melted butter and Italian seasoning, then brush over the tops of the rolls.
  • Step 5: Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 10 minutes until golden brown and cheese is melted.
  • Step 6: While sliders bake, prepare coleslaw by mixing coleslaw mix, mayonnaise, lime juice, salt, and pepper in a bowl.
  • Step 7: Remove sliders from oven, let cool for a couple of minutes, then serve warm with coleslaw on the side or on top.

Notes

For extra heat, use a spicier buffalo sauce or add red pepper flakes. You can also use rotisserie chicken for a quicker option.
