Ingredients

Bell Peppers

  • 3 pieces bell peppers Cut in half lengthwise and seeds removed.

Olive Oil

  • 2 tablespoons olive oil For drizzling on peppers.

Seasoning

  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Filling

  • 4 cups cooked shredded chicken Use a whole rotisserie chicken.
  • ½ cup buffalo sauce
  • ½ cup ranch dressing
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste green onions Thinly sliced, for garnish.
  • to taste crumbled blue cheese Optional, for garnish.

Instructions

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: Wash the bell peppers and cut them in half lengthwise. Remove the seeds and membranes. Place them cut-side up in a baking dish. Drizzle with olive oil, then sprinkle with salt and black pepper, giving them a light toss to coat.
  • Step 3: In a large mixing bowl, combine the shredded chicken, buffalo sauce, ranch dressing, shredded mozzarella cheese, garlic powder, and onion powder. Mix well until all ingredients are fully incorporated.
  • Step 4: Spoon the buffalo chicken mixture into each halved bell pepper, packing it tightly.
  • Step 5: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 25-30 minutes. Remove the foil and let it bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
  • Step 6: Once out of the oven, let the peppers sit for a few minutes. Garnish with thinly sliced green onions and crumbled blue cheese, if using. Serve warm and enjoy!

Notes
