Ingredients

  • 1 cup pure maple syrup
  • 1 cup fresh blueberries
  • 1 pinch kosher salt
  • 1 tablespoon orange zest (usually from 1 orange)
  • 2 tablespoons orange juice (usually from 1 orange)
  • 2 cups all-purpose flour
  • 1 tablespoon yellow cornmeal
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 6 tablespoons unsalted butter (melted)
  • 3 large eggs (separated)
  • 1 teaspoon vanilla extract
  • Cooking spray

Instructions

Prepare the Blueberry Sauce

  • In a small saucepan over medium heat, combine the fresh blueberries, 1 cup of pure maple syrup, a pinch of kosher salt, and 2 tablespoons of orange juice. Stir gently until the mixture begins to simmer. Cook for about 5-7 minutes, or until the blueberries have burst and the sauce has thickened slightly. Remove from heat and set aside.

Make the Waffle Batter

  • In a large mixing bowl, whisk together the all-purpose flour, yellow cornmeal, sugar, baking powder, baking soda, and 1 teaspoon of kosher salt. In another bowl, combine the buttermilk, melted unsalted butter, egg yolks, orange zest, and vanilla extract. Whisk until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  • In a separate bowl, use a mixer to beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the batter. This step is crucial for achieving airy and fluffy waffles.

Cook the Waffles

  • Preheat your waffle maker according to the manufacturer’s instructions. Lightly spray it with cooking spray to prevent sticking.
  • Once heated, pour an appropriate amount of batter into the waffle maker, making sure not to overfill. Close the lid and cook until the waffles are golden brown and crisp, usually about 4-5 minutes, depending on your waffle maker.

Serve

  • Carefully remove the waffles from the waffle maker and serve immediately, drizzling the warm blueberry sauce over the top. You can also add a dollop of whipped cream or a sprinkle of powdered sugar for extra flair!
