Ingredients

For the Cajun Seasoning:

  • 1 tablespoon salt
  • 1 tablespoon smoked paprika
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon cayenne pepper

For the Fries:

  • 5 pounds russet potatoes
  • 2 quarts fry oil (canola or peanut oil)

Instructions

Cooking Instructions:

  • Start by washing and peeling the russet potatoes. Cut them into uniform fry shapes, about 1/4 inch thick. Soak in cold water for at least 30 minutes.
  • While the fries are soaking, mix the seasoning ingredients in a bowl: salt, smoked paprika, Italian seasoning, garlic powder, onion powder, ground black pepper, and cayenne pepper.
  • In a large pot or deep fryer, heat the oil to 350°F (175°C).
  • Once the oil is hot, drain the soaked fries and pat them dry. Carefully add fries to the hot oil, frying for about 5-7 minutes or until golden brown.
  • Using a slotted spoon, remove fries and place them on a wire rack. While hot, sprinkle the Cajun seasoning generously over the fries, tossing for even coverage.
  • Serve immediately while hot and crispy, paired with your favorite dipping sauces.

Equipment

  • Large Pot or Deep Fryer
  • Slotted spoon
  • Potato peeler
  • Knife and cutting board
  • Mixing Bowl
  • Wire Rack

Notes

  • Serve fries fresh for the best taste and texture.
  • For storage, keep leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat fries in an oven at 400°F (200°C) for about 10-15 minutes to maintain crispiness.
