California Chicken Salad

This California Chicken Salad is a refreshing delight! Juicy chicken, crunchy celery, and sweet grapes come together in a creamy dressing.

Ingredients

  • 3 cups cooked chicken cubed or shredded
  • 1 cup diced celery
  • 1 cup halved red grapes
  • ½ cup chopped pecans
  • ½ cup real mayonnaise
  • to taste Salt
  • to taste Black Pepper
  • 4 croissants for serving, optional

Instructions

  • Start by cooking your chicken. You can use rotisserie chicken for convenience or boil, grill, or bake your chicken breasts until fully cooked. Once done, let them cool and then cube or shred the chicken into bite-sized pieces.
  • While the chicken cools, wash and dice your celery. Cut the red grapes in half for easy mixing and to ensure they blend well with the other ingredients.
  • In a large mixing bowl, combine the cubed or shredded chicken, diced celery, halved red grapes, and chopped pecans.
  • Spoon in the real mayonnaise and sprinkle with salt and black pepper. Mix everything together gently until the chicken and veggies are evenly coated with the mayonnaise.
  • Cover the mixing bowl with plastic wrap or a lid and place it in the refrigerator. Allow the salad to chill for at least 30 minutes to let the flavors meld.
  • Once chilled, serve the California Chicken Salad in croissants for a delightful twist or on its own. Enjoy the fresh flavors and textures!
