Ingredients

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini)
  • 1 bunch fresh basil leaves
  • 1/2 cup balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Turkey bacon cooked and cut into small pieces (optional)

Instructions

Prepare Your Ingredients

  • Wash cherry tomatoes and pat dry. Cook turkey bacon according to package instructions until crispy, then chop into small pieces. Rinse basil leaves and dry completely.

Assemble the Skewers

  • Take skewers and layer ingredients: start with a cherry tomato, then a basil leaf, a mozzarella ball, and another cherry tomato. Add a piece of turkey bacon after the mozzarella if using. Repeat until all ingredients are used.

Drizzle with Balsamic Glaze

  • Arrange skewers on a serving platter. Drizzle balsamic glaze generously over skewers, allowing it to pool slightly. Finish with a light drizzle of olive oil and sprinkle salt and pepper to taste.

Serve and Enjoy

  • Serve immediately or let sit at room temperature briefly. Guests can grab a skewer and enjoy the fresh, flavorful combination.

Equipment

  • Skewers
  • Serving Platter

Notes

  • Use fresh, high-quality ingredients like ripe cherry tomatoes and fresh mozzarella for best flavor.
  • Store assembled skewers in the refrigerator without balsamic glaze and drizzle just before serving to keep them from becoming soggy.
  • Experiment with different balsamic glazes to find a sweetness or tanginess you prefer.
  • Add other ingredients such as olives or artichokes for extra flavor and texture.
  • Try variations like heirloom tomatoes, flavored mozzarella, grilled vegetables, or grilled chicken/shrimp for a heartier skewer.
