Caramel Ritz Cracker Icebox Dessert

This Caramel Ritz Cracker Icebox Dessert is a no-bake sensation! Creamy, sweet, and salty, it's perfect for impressing your guests!

Ingredients

  • 2 packages cream cheese at room temperature
  • 1 cup sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 64 pieces Ritz crackers
  • 3/4 cup salted caramel sauce plus more for drizzling on top
  • 2 cups Cool Whip or freshly whipped cream

Instructions

  • In a large mixing bowl, beat the cream cheese and sugar together with an electric mixer until smooth and creamy. This should take about 2-3 minutes.
  • Add in the heavy cream, vanilla extract, and a pinch of salt. Continue to beat the mixture until it becomes fluffy and thick, about another 2-3 minutes.
  • In your 9x13-inch baking dish, start by laying down a single layer of Ritz crackers at the bottom. Make sure to cover the entire base.
  • Spread half of the cream cheese mixture over the layer of Ritz crackers. Smooth it out with a spatula.
  • Drizzle about half of the salted caramel sauce over the cream cheese layer.
  • Add another layer of Ritz crackers on top of the caramel drizzle, followed by the remaining cream cheese mixture. Finish with a final drizzle of the salted caramel sauce.
  • Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  • When you’re ready to serve, top with Cool Whip or freshly whipped cream and additional caramel sauce. Cut into squares and enjoy the delightful flavors of your Caramel Ritz Cracker Icebox Dessert!
