Ingredients

  • 1 recipe Vegan Cheese Sauce made with cashews and nutritional yeast
  • 1 clove garlic additional, for flavor
  • 1 teaspoon sea salt additional, for flavor
  • 1 teaspoon smoked paprika heaping, for flavor
  • 1 pinch cayenne for spice
  • 1 large cauliflower (just over 2 pounds, broken into 1-inch florets)
  • ¾ cup panko bread crumbs for topping
  • to taste Parmesan or Vegan Parmesan (for serving, optional)

Instructions

  • Step 1: Preheat your oven to 425°F (220°C). Wash and break the cauliflower into 1-inch florets.
  • Step 2: Place cauliflower on a baking sheet, drizzle with olive oil, sprinkle with sea salt, and roast for 20-25 minutes until golden brown and tender.
  • Step 3: While the cauliflower roasts, blend the Vegan Cheese Sauce with additional garlic, sea salt, smoked paprika, and cayenne until smooth.
  • Step 4: Combine roasted cauliflower with the vegan cheese sauce in a large bowl, stirring until coated.
  • Step 5: Transfer to a baking dish, sprinkle panko bread crumbs on top, and bake for another 15-20 minutes until the top is golden brown.
  • Step 6: Let cool for a few minutes before serving warm, optionally topped with Parmesan or Vegan Parmesan.
