Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion thinly sliced
  • 1/2 head cauliflower cut into bite-sized florets
  • 16 ounces mushrooms such as cremini or button, cleaned and quartered
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup vegetable broth
  • 3 cloves garlic minced
  • Red pepper flakes to taste (optional)
  • Fresh parsley chopped, for garnish

Instructions

  • In a large skillet over medium heat, add the 2 tablespoons of olive oil. Allow it to warm up for about a minute.
  • Add the thinly sliced onion to the skillet. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant.
  • Stir in the cauliflower florets. Cook for approximately 5 minutes, stirring occasionally, until they start to soften.
  • Next, add the quartered mushrooms to the skillet. They will release moisture while cooking, which adds depth to the flavor.
  • Sprinkle in the Italian seasoning, dried oregano, salt, and black pepper. Stir well to ensure the vegetables are evenly coated with the spices.
  • Pour in the 1/4 cup of vegetable broth and add the minced garlic. Stir everything together and let it simmer for about 5-7 minutes, or until the cauliflower and mushrooms are tender.
  • If you like some heat, sprinkle in red pepper flakes to taste. This step is optional but highly recommended for those who enjoy a spicy kick!
