Ingredients

For the Panini:

  • 2 slices bread (crusty sourdough works best)
  • 2 tablespoons pesto
  • 2 slices Craig's Creamery Medium Cheddar Cheese (mild or sharp cheddar can also be used)
  • 2 tablespoons butter (for grilling)

Instructions

Instructions:

  • Step 1: Prep Your Ingredients. Begin by gathering all your ingredients. Make sure your butter is softened for easier spreading.
  • Step 2: Butter the Bread. Spread a thin layer of butter on one side of each slice of bread. This will help achieve that golden, crispy texture.
  • Step 3: Add the Pesto. On the unbuttered side of one slice, spread 2 tablespoons of pesto evenly. This will be the inside of your panini.
  • Step 4: Layer the Cheese. Place 2 slices of Craig's Creamery Medium Cheddar Cheese on top of the pesto. If you’re feeling adventurous, add some extra ingredients like sliced tomatoes or fresh spinach.
  • Step 5: Assemble the Panini. Top with the second slice of bread, buttered side up, to create a sandwich.
  • Step 6: Grill the Panini. Heat your skillet or panini press over medium heat. Once hot, place the panini in the skillet. If using a skillet, press down with a spatula. Cook for about 3-4 minutes until golden brown, then carefully flip and grill the other side for another 3-4 minutes.
  • Step 7: Serve and Enjoy! Once both sides are crispy and the cheese is melted, remove the panini from the heat. Slice it in half and serve warm.

Equipment

  • Skillet or Panini Press
  • Spatula
  • Knife
  • Cutting Board

Notes

  • Ensure your cheese is at room temperature for easier melting.
  • Experiment with different types of pesto, like sun-dried tomato or arugula pesto, for a unique twist.
  • For an extra crispy crust, consider using a bit of olive oil along with butter.
