Begin by chopping your cauliflower into coarse pieces. If you have a food processor, you can pulse it a few times until the cauliflower resembles rice.
Steam the chopped cauliflower until it's tender, about 5-7 minutes. Make sure to drain it well to remove any excess moisture.
In a large mixing bowl, combine the steamed cauliflower, sharp cheddar cheese, Parmesan cheese, almond flour, Vege-Sal, Spike Seasoning, black pepper, and egg. Mix everything together until well combined.
Using your hands, take small portions of the mixture and shape them into tot-like forms.
Place the shaped tots on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside.
Once baked, allow the tots to cool slightly before serving. They are delightful on their own or with your favorite dipping sauce.
