Cheesy Baked Cauliflower Tots

Ingredients

  • 1/2 head cauliflower coarsely chopped
  • 1/3 cup sharp cheddar cheese
  • 1/4 cup Parmesan cheese coarsely grated
  • 2 tablespoons almond flour
  • 1/2 teaspoon Vege-Sal or slightly less regular salt
  • 1/2 teaspoon Spike Seasoning or other all-purpose seasoning blend
  • Fresh-ground black pepper to taste
  • 1 egg

Instructions

  • Begin by chopping your cauliflower into coarse pieces. If you have a food processor, you can pulse it a few times until the cauliflower resembles rice.
  • Steam the chopped cauliflower until it's tender, about 5-7 minutes. Make sure to drain it well to remove any excess moisture.
  • In a large mixing bowl, combine the steamed cauliflower, sharp cheddar cheese, Parmesan cheese, almond flour, Vege-Sal, Spike Seasoning, black pepper, and egg. Mix everything together until well combined.
  • Using your hands, take small portions of the mixture and shape them into tot-like forms.
  • Place the shaped tots on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside.
  • Once baked, allow the tots to cool slightly before serving. They are delightful on their own or with your favorite dipping sauce.
