Cheesy Bean Dip

This Cheesy Bean Dip is a creamy, cheesy delight that’s perfect for any gathering or cozy night in!

Ingredients

  • 30 ounce pinto beans (or two 15 oz. cans)
  • 4 ounce cream cheese (block, softened)
  • 2/3 cup sour cream
  • 1 packet taco seasoning
  • 1/4 cup salsa
  • 1 cup freshly shredded cheddar or Mexican blend cheese

Instructions

  • Begin by draining and rinsing the pinto beans. Mash them slightly in a large mixing bowl.
  • Add the softened cream cheese, sour cream, and taco seasoning to the mashed beans and mix until creamy.
  • Fold in the salsa and half of the shredded cheese, then transfer to a microwave or oven-safe dish. Top with remaining cheese.
  • Heat in the microwave for 3-5 minutes or bake in a preheated oven at 350°F (175°C) for 20-25 minutes until hot and bubbly.

Notes

  • You can prepare the dip a day ahead and refrigerate it before heating.
