Ingredients

  • 2 cups cooked quinoa
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated carrot
  • 1 1/2 cups chopped broccoli
  • 1/2 teaspoon salt (feel free to omit if feeding littles)

Instructions

  • Step 1: Preheat your oven to 375°F (190°C) for even cooking.
  • Step 2: Cook quinoa according to package instructions and let cool. Chop broccoli and grate carrot.
  • Step 3: In a large mixing bowl, combine quinoa, eggs, cheddar cheese, carrot, broccoli, and salt. Mix until combined.
  • Step 4: Form the mixture into small balls or patties, or use a greased muffin tin.
  • Step 5: Bake on a lined baking sheet for about 20-25 minutes until golden brown and firm.
  • Step 6: Let cool for a few minutes before serving warm or at room temperature.
