Start by chopping the fresh spinach and green onions. Cut the chicken breast into tiny pieces.
In a large mixing bowl, combine the chopped spinach, chicken, minced garlic, eggs, flour, mozzarella cheese, parmesan cheese, black pepper, and salt. Stir until everything is well incorporated.
In a frying pan, heat the oil over medium heat until hot.
Using a spoon or your hands, scoop out portions of the mixture and form them into patties, about 2-3 inches in diameter.
Carefully place the fritters in the hot oil, frying for about 4-5 minutes on each side until golden brown.
