Ingredients

  • 1 lb chicken breast cut into tiny pieces
  • 2 cups fresh spinach chopped
  • 2 units eggs
  • 1/2 cup flour
  • 1/4 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 3 tbsp oil (for frying)
  • 1 tsp black pepper
  • Salt to taste
  • 2 tbsp green onion chopped

Instructions

  • Start by chopping the fresh spinach and green onions. Cut the chicken breast into tiny pieces.
  • In a large mixing bowl, combine the chopped spinach, chicken, minced garlic, eggs, flour, mozzarella cheese, parmesan cheese, black pepper, and salt. Stir until everything is well incorporated.
  • In a frying pan, heat the oil over medium heat until hot.
  • Using a spoon or your hands, scoop out portions of the mixture and form them into patties, about 2-3 inches in diameter.
  • Carefully place the fritters in the hot oil, frying for about 4-5 minutes on each side until golden brown.
  • Transfer the fritters to a plate lined with paper towels to drain excess oil. Serve warm with a dipping sauce or enjoy plain.
