Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 eggs
  • 1 cup all-purpose flour
  • Oil for frying (such as vegetable or canola oil)

Instructions

Prepare Your Breading Station

  • Set up three shallow bowls or plates. Place the all-purpose flour in the first bowl. Beat the eggs until smooth in the second bowl. In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.

Prepare the Chicken Breasts

  • If chicken breasts are thick, slice them horizontally to create thinner cutlets. Pat dry with paper towels to help breading adhere better.

Bread the Chicken

  • Dredge each chicken breast in flour, coating completely and shaking off excess. Dip into beaten eggs, letting excess drip off. Press chicken into breadcrumb and Parmesan mixture, coating evenly. For extra crunch, repeat egg and breadcrumb step once more.

Fry the Chicken

  • Heat about ½ inch of oil in a large skillet over medium heat. Test oil by sprinkling breadcrumbs; they should sizzle immediately. Place breaded chicken breasts carefully in hot oil without overcrowding. Fry 4-5 minutes per side or until golden brown and cooked through (internal temp 165°F/75°C).

Drain and Serve

  • Transfer cooked chicken to a plate lined with paper towels to absorb excess oil. Let rest a couple minutes before serving. Serve with your favorite sides like mashed potatoes, steamed vegetables, or a salad.
