Ingredients

  • 2 cups cooked chicken shredded, sliced, or diced
  • 1 whole ripe avocado diced or sliced
  • 1 cup cheddar or mozzarella cheese
  • 1/4 cup sour cream, mayo, or your favorite sauce
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime or lemon juice
  • 4 large tortillas
  • 1 teaspoon oil

Instructions

  • Step 1: Prepare the Chicken. If you don't already have cooked chicken on hand, you can easily poach, grill, or bake some until it's fully cooked. Once it's ready, shred, slice, or dice it into bite-sized pieces.
  • Step 2: Mix the Filling. In a large mixing bowl, combine the cooked chicken, diced avocado, cheese, and chopped cilantro. Drizzle in the lime or lemon juice and add your choice of sauce. Gently fold everything together until well combined, being careful not to mash the avocado too much.
  • Step 3: Warm the Tortillas. In a skillet, heat a teaspoon of oil over medium heat. Add your tortillas one at a time, warming them for about 30 seconds on each side until they're pliable.
  • Step 4: Assemble the Wraps. Place a generous scoop of the chicken and avocado mixture in the center of each tortilla. Fold in the sides and roll it up tightly from the bottom. If desired, you can secure the wrap with a toothpick or wrap it in foil for easier handling.
  • Step 5: Serve and Enjoy. Slice the wraps in half if you like, and serve them with your favorite dipping sauce or a side of fresh veggies.
