Chicken Florentine Gnocchi Casserole

Ingredients

  • 1 pound chicken breast cooked and shredded
  • 2 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup grated Parmesan cheese
  • 16 ounces gnocchi store-bought potato gnocchi
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1/4 cup chicken broth

Instructions

Prepare the Gnocchi

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the surface, about 2-3 minutes. Drain and set aside.

Sauté Garlic and Spinach

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with a pinch of salt and pepper, then remove from heat.

Combine Ingredients

  • In a large mixing bowl, combine the cooked gnocchi, shredded chicken breast, sautéed spinach and garlic, ricotta cheese, half of the mozzarella, Parmesan cheese, Italian seasoning, and chicken broth. Mix gently until all ingredients are evenly incorporated. Taste and adjust seasoning with salt and pepper as needed.

Assemble the Casserole

  • Preheat your oven to 375°F (190°C). Transfer the gnocchi mixture into a greased 9x13-inch baking dish. Sprinkle the remaining mozzarella cheese evenly over the top.

Bake to Perfection

  • Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese on top is melted and golden brown and the casserole is bubbly around the edges.

Serve and Enjoy

  • Remove from the oven and let the casserole rest for 5 minutes before serving. This allows it to set slightly, making it easier to portion and enjoy.
