Chicken Mozzarella Skillet

Ingredients

For the Chicken:

  • 2 lbs boneless skinless chicken breasts cut or pounded to thin cutlets
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil

For the Sauce:

  • 4 oz buffalo mozzarella sliced
  • 4 cloves garlic pressed
  • 28 oz crushed tomatoes (1 can)
  • 1 tbsp Italian seasoning (dried)
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1/3 cup fresh basil chopped

  • Begin by seasoning the chicken cutlets. In a small bowl, mix together the garlic powder, salt, and pepper. Rub this seasoning mixture over both sides of the chicken cutlets to ensure they are well coated.
  • Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken cutlets. Sear them for about 4-5 minutes on each side, or until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside.
  • In the same skillet, add the pressed garlic and sauté for about 30 seconds until fragrant. Be careful not to let it burn! Next, pour in the crushed tomatoes and stir in the Italian seasoning and salt. Bring the mixture to a simmer.
  • Once the sauce has simmered for about 5 minutes, reduce the heat to low and stir in the heavy cream and parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  • Return the seared chicken cutlets to the skillet, nestling them into the creamy tomato sauce. Top each cutlet with slices of buffalo mozzarella. Cover the skillet and let it cook for another 5-7 minutes, or until the cheese is melted and bubbly.
  • Sprinkle the chopped fresh basil over the top of the Chicken Mozzarella Skillet just before serving. This adds a burst of freshness that complements the rich flavors of the dish beautifully.
