Ingredients

For the Chicken:

  • 3 large boneless, skinless chicken breasts
  • 2 tablespoons capers
  • 2 tablespoons olive oil
  • Salt and pepper to season
  • 1/2 teaspoon poultry seasoning
  • 2 teaspoons finely minced fresh garlic
  • 1/2 cup homemade chicken stock
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sweetener of your choice (optional)
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley for garnish

  • Step 1: Prepare the Chicken - Place the chicken breasts between two pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about 1 inch. Season both sides with salt, pepper, and poultry seasoning.
  • Step 2: Sear the Chicken - Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Transfer the chicken to a plate and cover to keep warm.
  • Step 3: Fry the Capers - In the same skillet, add the capers and fry them for about 2-3 minutes until crispy. Remove the capers and place them on a paper towel to drain excess oil.
  • Step 4: Make the Sauce - Lower the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken stock and lemon juice, scraping the bottom of the skillet. If desired, add sweetener at this point.
  • Step 5: Finish with Butter - Add the butter in pieces, stirring until melted and combined. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for another minute to heat through.
  • Step 6: Serve and Garnish - Place the chicken on a platter, drizzle with the sauce, and top with the fried capers. Sprinkle chopped parsley for a fresh finish.
