Chicken Salad Tartine Toasts

Ingredients

  • 1/2 whole rotisserie chicken shredded
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon sweet pickle relish
  • 2 teaspoons stone ground or dijon mustard
  • 2 teaspoons capers the smallest ones
  • to taste salt and pepper
  • 6 slices sourdough bread toasted
  • to drizzle olive oil
  • optional microgreens for garnish

Instructions

  • Start by shredding the 1/2 rotisserie chicken. Remove the skin and bones, and place the shredded chicken into a mixing bowl.
  • In the same bowl, add 3 tablespoons mayonnaise, 1 tablespoon fresh parsley, 1 tablespoon sweet pickle relish, 2 teaspoons mustard, and 2 teaspoons capers. Season with salt and pepper to taste. Mix gently until well combined.
  • Toast 6 slices of sourdough bread until golden brown and crispy.
  • Place the toasted bread on a serving platter and spoon a generous amount of the chicken salad mixture onto each slice.
  • Drizzle olive oil over each tartine and sprinkle with microgreens for garnish.
