Ingredients

  • 1 pound boiled chicken cut into bite-sized pieces
  • 1 cup mayonnaise
  • 1/2 cup dill pickles chopped
  • 1/4 red onion diced

Instructions

  • Begin by boiling your chicken until it's fully cooked. This usually takes about 15-20 minutes. Once done, allow it to cool, then cut it into bite-sized pieces.
  • While the chicken is cooling, finely dice the red onion and chop the dill pickles. The smaller the pieces, the better they will blend into your salad.
  • In a large mixing bowl, combine the boiled chicken, mayonnaise, chopped pickles, and diced red onion. The mayonnaise acts as the perfect binder, adding creaminess to the mix.
  • Using a spoon or spatula, gently mix all the ingredients until everything is well-coated with mayonnaise. Be careful not to overmix, as you want to maintain the texture of the chicken and veggies.
  • Cover the bowl with plastic wrap and chill the salad in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully. When you're ready to serve, enjoy it on a bed of lettuce, in a sandwich, or with crackers.
