  • 2 tablespoons olive oil (not extra virgin, or avocado oil)
  • 1 lb ground chicken
  • ½ medium yellow onion finely diced
  • 2 cloves garlic minced
  • 1 medium green bell pepper finely diced
  • ½ cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ cup water (add more if needed)
  • 4-6 buns brioche

Instructions

  • Step 1: In a large skillet, heat the olive oil over medium heat. Add the finely diced yellow onion, and sauté for about 3-4 minutes, or until it becomes translucent. Add the minced garlic and diced green bell pepper, stirring frequently for another 2-3 minutes until the bell pepper softens.
  • Step 2: Increase the heat to medium-high and add the ground chicken to the skillet. Cook the chicken, breaking it apart with a spatula, for about 6-8 minutes or until it’s fully cooked and no longer pink.
  • Step 3: Reduce the heat back to medium and stir in the ketchup, Worcestershire sauce, yellow mustard, tomato paste, chili powder, and salt. Mix everything together until the chicken is well coated with the sauce.
  • Step 4: Pour in the water and stir the mixture again. Let it simmer for 5-10 minutes, allowing the sauce to thicken. If you find the mixture too thick, add more water, a tablespoon at a time, until you reach your desired consistency.
  • Step 5: While the sloppy joe mixture simmers, you can toast your brioche buns if desired. Lightly butter the insides and toast them on a hot skillet, face down, until golden brown.
  • Step 6: Once the Chicken Sloppy Joe filling is ready, spoon generous portions onto the bottom half of each brioche bun. Top with any additional toppings you prefer, such as pickles, lettuce, or shredded cheese. Place the top bun on and serve hot!
