Ingredients

  • 1 cup chopped walnuts
  • 2 cups cubed or shredded cooked chicken
  • 1/2 cup minced celery
  • 1 cup halved grapes
  • 1 cup firm, sweet diced apples
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 small lemon juiced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

Instructions

  • Gather all your ingredients. Chop the walnuts, mince the celery, and dice the apples into small pieces. Halve the grapes and set them aside.
  • In a mixing bowl, combine the plain Greek yogurt, mayonnaise, lemon juice, kosher salt, and pepper. Whisk until the dressing is smooth and creamy.
  • In a large bowl, add the cubed chicken, minced celery, halved grapes, diced apples, and chopped walnuts. Pour the dressing over the top and gently toss everything together until well coated.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve on a bed of greens or in a sandwich.
