Ingredients

  • 1 tablespoon olive oil
  • 14 ounces chickpeas can drained and rinsed
  • 1 medium red onion chopped small
  • 2 cloves garlic minced
  • 1/2 cup roasted red peppers chopped small
  • 3 teaspoons dried oregano leaves
  • 3 cups brown rice cooked
  • 1 teaspoon tomato paste no sugar added
  • 1 small roma tomato chopped small
  • 1/2 cup feta cheese crumbles, fat-free
  • 1 whole lemon cut into 4 wedges

Instructions

  • In a large skillet, heat the 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until it becomes translucent.
  • Stir in the minced garlic and dried oregano, cooking for an additional 1-2 minutes until fragrant.
  • Add the drained and rinsed chickpeas to the skillet. Stir well to combine with the aromatics.
  • Fold in the chopped roasted red peppers and tomato paste. Mix everything until the tomato paste is evenly distributed.
  • Incorporate the cooked brown rice into the skillet. Gently stir to combine all the ingredients, allowing the rice to heat through.
  • Remove the skillet from heat, then fold in the chopped roma tomato and feta cheese crumbles.
  • Serve the Chickpea Mediterranean Rice hot, garnished with lemon wedges on the side for a fresh squeeze of citrus.
