Ingredients

  • 2 large eggs fresh
  • 1/3 cup warm water or low-sodium chicken broth
  • 2 pinches salt
  • 1 teaspoon sesame oil
  • 3/4 teaspoon soy sauce
  • 1 tablespoon sliced scallions optional

Instructions

  • In a mixing bowl, crack the 2 large eggs. Using a whisk or fork, gently beat the eggs until combined.
  • Gradually add warm water or low-sodium chicken broth to the beaten eggs, using a ratio of 1:1.5.
  • Add the salt, sesame oil, and soy sauce to the egg mixture. Stir gently.
  • Optionally, strain the mixture through a fine-mesh sieve for a smoother texture.
  • Set up your steamer and pour the egg mixture into a steaming dish, covering it.
  • Steam the eggs over medium heat for about 10-15 minutes, until set but slightly jiggly.
  • Carefully remove from the steamer and garnish with scallions. Serve immediately.
