Chipotles Cilantro Lime Rice (Copycat Recipe)

Ingredients

  • 1 teaspoon vegetable oil
  • 2/3 cup white basmati rice rinsed
  • 1 tablespoon lime juice
  • 1 cup water
  • 1/2 teaspoon salt
  • 2 teaspoons coarsely chopped fresh cilantro

Instructions

  • Start by rinsing the basmati rice under cold water in a fine mesh strainer to remove excess starch.
  • In a medium-sized saucepan, heat 1 teaspoon of vegetable oil over medium heat. Add the rinsed rice and sauté for about 1-2 minutes until slightly toasted.
  • Pour in 1 cup of water and add 1/2 teaspoon of salt. Stir briefly to combine, then bring to a boil.
  • Once boiling, reduce heat to low, cover, and let simmer for about 15-20 minutes or until water is absorbed and rice is tender.
  • After cooking, remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and stir in 1 tablespoon of lime juice and chopped cilantro.
