Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1 cup Dutch-process cocoa powder
  • 0.5 teaspoon kosher salt
  • 10 tablespoons butter cut into pieces, at room temperature
  • 0.5 cup powdered sugar
  • 2 egg yolks at room temperature
  • 0.5 teaspoon vanilla extract

For the Caramel Filling:

  • 1 cup heavy cream for caramel and ganache

For the Ganache:

  • 1 cup chocolate chips for topping (optional)

Build Chocolate Caramel Tart Step by Step

  • Step 1: Prepare the Tart Crust - In a large mixing bowl, combine flour, cocoa powder, and kosher salt. Mix well.
  • Step 2: Add Butter and Sugar - Add butter and powdered sugar to the dry ingredients. Mix until resembling coarse crumbs.
  • Step 3: Incorporate Egg Yolks - Add egg yolks and vanilla extract. Stir until the dough is soft and slightly sticky.
  • Step 4: Chill the Dough - Press dough into tart pan, prick with a fork, and refrigerate for at least 30 minutes.
  • Step 5: Bake the Crust - Preheat oven to 350°F. Bake for 15-20 minutes until set. Let cool completely.
  • Step 6: Make the Caramel Filling - In a saucepan, combine sugar and heavy cream. Boil until golden, then cool slightly.
  • Step 7: Fill the Tart - Pour caramel filling into cooled crust and let set at room temperature.
  • Step 8: Prepare the Ganache - Heat heavy cream in a double boiler, pour over chocolate chips, and stir until smooth.
  • Step 9: Assemble the Tart - Pour ganache over caramel layer and refrigerate for at least 2 hours.
  • Step 10: Serve and Enjoy! - Remove from pan, slice, and serve.
