  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 1 cup dark chocolate chips
  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)

  • Preheat your oven to 325°F (162°C).
  • In a large mixing bowl, combine the rolled oats, mixed nuts, salt, and cinnamon (if using). Stir until evenly mixed.
  • In a small saucepan over low heat, combine the honey (or maple syrup) and coconut oil. Stir until melted and well combined. Remove from heat and mix in the vanilla extract.
  • Pour the melted mixture over the oat and nut blend. Use a spatula to mix everything together until well coated.
  • Line your baking sheet with parchment paper. Spread the granola mixture evenly across the sheet, pressing it down slightly.
  • Bake for about 25-30 minutes, stirring halfway through. Keep an eye on it to prevent burning—look for a golden brown color.
  • Once out of the oven, let it cool for a few minutes, then mix in the dried cherries, cranberries, and dark chocolate chips.
  • Allow the granola to cool completely before transferring it to an airtight container.
