Preheat your oven to 325°F (162°C).
In a large mixing bowl, combine the rolled oats, mixed nuts, salt, and cinnamon (if using). Stir until evenly mixed.
In a small saucepan over low heat, combine the honey (or maple syrup) and coconut oil. Stir until melted and well combined. Remove from heat and mix in the vanilla extract.
Pour the melted mixture over the oat and nut blend. Use a spatula to mix everything together until well coated.
Line your baking sheet with parchment paper. Spread the granola mixture evenly across the sheet, pressing it down slightly.
Bake for about 25-30 minutes, stirring halfway through. Keep an eye on it to prevent burning—look for a golden brown color.
Once out of the oven, let it cool for a few minutes, then mix in the dried cherries, cranberries, and dark chocolate chips.
Allow the granola to cool completely before transferring it to an airtight container.
