Ingredients

For the Brownie Layer:

  • 4 ounces unsweetened baking chocolate coarsely chopped
  • 1 cup unsalted butter
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup all-purpose flour

For the Cookie Dough Layer:

  • ½ cup unsalted butter melted
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour
  • 1 ½ cups chocolate chips semi-sweet or milk

Directions:

  • Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures your brookies bake evenly.
  • Step 2: Prepare the Baking Pan - Line your 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  • Step 3: Make the Brownie Batter - In a medium saucepan, melt the unsweetened baking chocolate and 1 cup of unsalted butter over low heat, stirring until smooth. Remove from heat and let it cool slightly.
  • Step 4: Combine Brownie Ingredients - In a large bowl, whisk together the granulated sugar, eggs, vanilla extract, and salt until well combined. Gradually stir in the melted chocolate mixture until smooth. Add the cocoa powder and flour, mixing until just combined.
  • Step 5: Spread the Brownie Layer - Pour the brownie batter into the prepared pan, spreading it evenly.
  • Step 6: Prepare the Cookie Dough - In a separate bowl, cream together the melted unsalted butter, granulated sugar, and light brown sugar. Add the egg and vanilla extract, mixing until combined. In another bowl, whisk together the baking soda, salt, and flour. Gradually mix the dry ingredients into the wet ingredients, then fold in the chocolate chips.
  • Step 7: Assemble the Brookies - Drop spoonfuls of the cookie dough on top of the brownie layer. Use a spatula to gently spread the cookie dough over the brownies, ensuring coverage.
  • Step 8: Bake - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake, as you want that fudgy texture!
