Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
In a large mixing bowl, combine the honey, coconut sugar (or brown sugar), coconut oil, and vanilla. Mix until well combined and smooth.
Stir in the roasted peanuts, raw almonds, roasted pistachios, roasted cashews, raw pepitas, raw sesame seeds, and raw hemp seeds. Mix thoroughly until all the nuts and seeds are evenly coated in the wet mixture.
Transfer the nut mixture into the prepared baking dish. Using a spatula, press the mixture firmly and evenly into the dish.
Place the baking dish in the refrigerator for about 1-2 hours, or until the mixture is firm and set.
While the mixture is chilling, melt the dark chocolate using a double boiler or microwave.
Once the mixture is set, remove it from the refrigerator and lift it out of the pan using the parchment paper. Cut it into bars or squares.
Dip each bar into the melted chocolate, allowing the excess to drip off.
Place the dunked bars on a parchment-lined tray and sprinkle with flaky sea salt while the chocolate is still wet.
Allow the chocolate to set at room temperature or place the bars back in the fridge for a faster setting time.
