In a medium saucepan, combine the old fashioned rolled oats, unsweetened almond milk, water, kosher salt, cocoa powder, maple syrup, ground cinnamon, and ground cardamom (if using). Stir well to combine all the ingredients.
Place the saucepan over medium heat. Bring the mixture to a gentle boil, stirring occasionally to prevent the oats from sticking to the bottom of the pan.
Once boiling, reduce the heat to low and let it simmer for about 5-7 minutes, or until the oats are soft and the mixture has thickened to your desired consistency. Keep stirring occasionally for even cooking.
Taste the oatmeal and adjust the sweetness if needed by adding more maple syrup. Stir well to combine.
Remove the saucepan from heat and spoon the Chocolate Oatmeal into bowls. Add your favorite toppings such as chocolate chips, a dollop of yogurt, or a splash of milk for extra creaminess.
