Ingredients

For the Bars:

  • 1 heaping cup creamy peanut butter Use brands like Jif or Skippy for the best results.
  • 1 cup light-colored corn syrup This will help bind everything together.
  • 1 cup granulated sugar For that perfect sweetness.
  • 1 cup light brown sugar packed; adds richness and depth of flavor.
  • 1 tablespoon vanilla extract A must-have for enhancing the overall taste.
  • 3 cups Special K Cereal Provides a satisfying crunch.
  • 1 cup semi-sweet chocolate chips For melting and drizzling.
  • 1 cup creamy peanut butter Yes, you’ll need more for the chocolate layer!
  • 1 cup bite-sized candy bar pieces I used Rolo, Reese’s Pieces, mini Reese’s Peanut Butter Cups, and Butterfinger Cups; feel free to substitute with your favorites.

Instructions

Preparation Steps:

  • Step 1: Prepare Your Baking Dish - Line your baking dish with parchment paper, leaving some overhang on the sides. This will make it easier to lift the bars out once they’re set.
  • Step 2: Mix the Peanut Butter Base - In a large mixing bowl, combine the heaping cup of creamy peanut butter, corn syrup, granulated sugar, brown sugar, and vanilla extract. Mix until fully combined and smooth.
  • Step 3: Add the Cereal - Gently fold in the Special K cereal until all the cereal is coated with the peanut butter mixture. Be careful not to crush the cereal too much; you want to maintain that delightful crunch.
  • Step 4: Press into the Baking Dish - Transfer the mixture to your prepared baking dish. Press it down firmly and evenly using a spatula or your hands. Make sure it’s tightly packed to hold together once set.
  • Step 5: Melt the Chocolate Peanut Butter Topping - In a microwave-safe bowl, combine the chocolate chips and the additional cup of creamy peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  • Step 6: Spread the Chocolate Mixture - Pour the melted chocolate and peanut butter mixture over the pressed cereal base. Use a spatula to spread it evenly over the top.
  • Step 7: Add the Candy Pieces - Sprinkle the bite-sized candy bar pieces evenly over the melted chocolate. Press them down gently to ensure they stick.
  • Step 8: Chill - Refrigerate the bars for at least 1-2 hours, or until the chocolate is set and the bars are firm.
  • Step 9: Cut and Serve - Once chilled, lift the bars out of the dish using the parchment overhang. Cut them into squares or rectangles, and serve. Enjoy your delicious Chocolate Peanut Butter Candy Bars!
