Ingredients

  • 1/2 cup strawberries hulled
  • 1 tablespoon honey
  • 1 teaspoon lemon juice

For the Cream Cheese Layer:

  • 1/2 cup coconut milk canned
  • 1/3 cup cream cheese fat-free, softened

For the Chocolate Layer:

  • 5 ounces milk chocolate coarsely chopped

For Garnish:

  • 7 strawberries quartered
  • Fresh mint leaves for garnish

  • Begin by hulling the 1/2 cup of strawberries and placing them in a bowl. Add the honey and lemon juice, then mash them lightly with a fork until they are a chunky puree. Set aside to let the flavors meld.
  • In another bowl, combine the softened cream cheese and canned coconut milk. Use a whisk to blend them together until smooth and creamy. This mixture will serve as the base for your Chocolate Strawberry Cups.
  • Using a double boiler or microwave, melt the coarsely chopped milk chocolate until it is smooth and silky. If using a microwave, heat it in 30-second intervals, stirring in between to prevent burning.
  • In your cupcake liners or molds, start by adding a layer of the melted chocolate at the bottom. Allow it to set slightly in the refrigerator for about 10 minutes.
  • Once the chocolate layer has set, spoon in a thick layer of the cream cheese mixture on top.
  • Next, add a spoonful of the strawberry mixture on top of the cream cheese layer. You can use the quartered strawberries to garnish the top for an extra pop of color and flavor.
  • Finish off your cups by drizzling the remaining melted chocolate over the strawberry layer.
