Ingredients

  • 2 cups vegetable broth to infuse flavor
  • 1 cup quinoa rinsed and drained
  • 1 clove garlic minced
  • 2 tablespoons fresh lime juice for zest
  • 1/3 cup chopped cilantro adds freshness
  • Salt and pepper to taste

Instructions

  • Start by rinsing 1 cup of quinoa under cold water in a fine mesh strainer to remove any bitter taste.
  • In a medium saucepan, heat a little olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the rinsed quinoa to the saucepan with the sautéed garlic. Pour in the vegetable broth, stir to combine, and bring to a boil. Reduce heat to low, cover, and let it simmer for about 15 minutes.
  • Once the quinoa is cooked, remove it from the heat and let it sit for 5 minutes. Fluff it with a fork to separate the grains.
  • Stir in the fresh lime juice and chopped cilantro, seasoning with salt and pepper to taste.
  • Transfer the Cilantro Lime Quinoa to a serving dish and enjoy warm as a side or main dish!
