Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 4 very ripe bananas
  • 1 cup sugar
  • 3/4 cup butter melted and cooled
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon for topping
  • 2 tablespoons sugar for topping

Instructions

  • Start by preheating your oven to 350°F (175°C). Grease your loaf pan with butter or line it with parchment paper for easy removal.
  • In a large mixing bowl, whisk together the flour, baking soda, and salt. This step ensures even distribution of the leavening agent and salt throughout your bread.
  • In another bowl, mash the very ripe bananas with a fork until smooth. The riper the bananas, the sweeter your bread will be!
  • Add the melted butter and sugar to the mashed bananas. Stir until well mixed, then add the eggs and vanilla extract. Mix until fully combined.
  • Pour the banana mixture into the dry ingredients. Gently fold the mixture using a rubber spatula until just combined. Be careful not to overmix; a few lumps are okay!
  • In a small bowl, combine the tablespoon of ground cinnamon with the two tablespoons of sugar. Set aside.
  • Pour the batter into your prepared loaf pan. Sprinkle the cinnamon sugar mixture generously over the top. This will create a delightful crunchy layer as it bakes!
  • Place the loaf pan in the preheated oven and bake for 60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  • Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a cooling rack to cool completely. Slice and enjoy your Cinnamon Topped Banana Bread warm or at room temperature!
