Ingredients

For the Chicken:

  • 4 pieces chicken thighs bone-in and skin-on
  • 1 whole orange 1/2 juiced and 1/2 sliced
  • 1 whole lemon 1/2 juiced and 1/2 sliced
  • 1 whole lime 1/2 juiced and 1/2 sliced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons fresh thyme leaves
  • Kosher salt to taste
  • pepper to taste

Instructions

Cooking Instructions:

  • Step 1: Preheat your oven to 425°F (220°C).
  • Step 2: In a mixing bowl, combine the juice of the orange, lemon, and lime with olive oil, rosemary, thyme, salt, and pepper.
  • Step 3: Place chicken thighs in a roasting pan and pour the marinade over them. Rub the marinade into the skin and under the skin.
  • Step 4: Arrange sliced citrus fruits around and on top of the chicken.
  • Step 5: Roast for 35-40 minutes until the internal temperature reaches 165°F (75°C).
  • Step 6: Let the chicken rest for 5-10 minutes before serving.

Notes

  • For a lighter version, use skinless chicken thighs.
