Classic Cosmic Brownies

Ingredients

  • 6 ounces dark chocolate chopped
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1/2 cup dark brown sugar packed
  • 3 large eggs room temperature
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup cocoa powder
  • 1 cup all-purpose flour
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • Rainbow chips or sprinkles for topping

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Grease and line the baking pan with parchment paper, leaving some overhang for easy removal later.
  • Step 2: In a double boiler or microwave-safe bowl, combine the chopped dark chocolate and melted butter. Heat gently until the chocolate is fully melted and smooth, stirring occasionally.
  • Step 3: In a large mixing bowl, whisk together the granulated sugar and dark brown sugar. Once combined, add the melted chocolate mixture and stir until well incorporated.
  • Step 4: Crack the eggs into the sugar-chocolate mixture, one at a time, whisking well after each addition. Add in a splash of vanilla extract if desired for additional flavor.
  • Step 5: In a separate bowl, sift together the salt, cornstarch, baking powder, cocoa powder, and flour. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  • Step 6: Gently fold in the semi-sweet chocolate chips, ensuring they are evenly distributed throughout the batter.
  • Step 7: Pour the brownie batter into the prepared baking pan, smoothing the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Step 8: While the brownies are baking, prepare the chocolate ganache. Heat the heavy cream until just simmering, then pour over the remaining chopped chocolate and 2 tablespoons of butter in a bowl. Let sit for a couple of minutes, then whisk until smooth and glossy.
  • Step 9: Once the brownies have cooled completely, pour the ganache over the top, spreading evenly. Immediately sprinkle with rainbow chips or sprinkles for that iconic Cosmic touch.
  • Step 10: Use the parchment overhang to lift the brownies out of the pan. Cut into squares and enjoy your Classic Cosmic Brownies!
