Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper for easy cleanup.

Mixing the Meatloaf

  • In a large mixing bowl, combine the ground beef, breadcrumbs, diced onion, diced bell pepper, minced garlic, milk, eggs, salt, black pepper, and Worcestershire sauce. Mix gently but thoroughly without overmixing.

Shaping the Meatloaf

  • Transfer the mixture into your prepared loaf pan or shape it into a loaf on the baking sheet. Press it down lightly to ensure it’s compact but not too tight.

Making the Tomato Glaze

  • In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard until smooth.

Glazing and Baking

  • Spread about half of the tomato glaze evenly on top of the meatloaf.
  • Bake for 45 minutes. Remove from oven, spread remaining glaze on top, then bake for an additional 15-20 minutes until the internal temperature reaches 160°F (71°C).

Resting and Serving

  • Let the meatloaf rest for 10 minutes before slicing and serving warm with your favorite sides.
