Start by rinsing the chicken wings under cold water and patting them dry with paper towels. Season the wings with ½ teaspoon of salt and set them aside.
In a mixing bowl, combine the Coca-Cola, soy sauce, juice from the lime, smashed garlic, and sliced ginger. Whisk together until well mixed.
Place the seasoned chicken wings into the bowl of marinade. Toss them gently to ensure they are well coated. Cover the bowl with plastic wrap and let the wings marinate in the refrigerator for at least 1 hour, or up to overnight.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the marinated chicken wings on the sheet.
Bake the wings for about 30-35 minutes, flipping them halfway through to ensure even browning. They should be golden brown and crispy.
While the wings are baking, pour the leftover marinade into a saucepan. Bring it to a simmer over medium heat and add a cornstarch slurry to thicken the sauce.
Once the wings are cooked, remove them from the oven and toss them in the thickened Coca-Cola sauce until well coated. Garnish with sliced scallions and serve immediately.
