Ingredients

  • 125 g soft butter at room temperature
  • 90 g brown sugar or coconut sugar for a different flavor
  • 2 units eggs binding agent
  • 1 tsp vanilla extract enhances flavor
  • 2-3 units limes grated rind
  • 200 g all-purpose flour base of cookie dough
  • 50 g coconut flakes for flavor and texture
  • 1 pinch salt balances sweetness

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, cream the soft butter and brown sugar together until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • Add the grated lime rind to the mixture.
  • In a separate bowl, whisk together the all-purpose flour, coconut flakes, and pinch of salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Scoop rounded balls of dough onto a parchment-lined baking sheet.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let them cool on the baking sheet for about 5 minutes, then transfer to a cooling rack.
